Our 2019 Blanc de Noirs was crafted in the traditional méthode champenoise from 100% Pinot Noir. The grapes were harvested on August 26-28, whole-cluster pressed for the cleanest juice, and fermented in stainless steel and barrel. After fermenting to dryness, went into bottle for the crucial re-fermentation and aging en tirage. After a year and a half on the yeast , it was disgorged, and finished in the very dry and crisp brut style.
This bubbly is deliciously complex and crisp, with a glimmer of copper-pink color from the Pinot Noir. Aromas of tart apple and a whisper of raspberry invite you to take a sip. Concentrated flavors of stone fruit and mineral invite you to take another sip, and the finish hints of brioche. The balanced structure is fresh and lively.
